Midwinter zucchini! Too ambitious perhaps!

Frozen grated zucchini was a great idea when there was WAY too much fresh zucchini in my kitchen. Now it just haunts me every time I look in the freezer! On Monday I grabbed 4 bags, determined to do something with them but tossing them out was not an option !lol!

The hubby has been on a modified keto diet for a few months, I looked up keto zucchini recipes and made bread with almond flour. The dough did not look very appetizing, but I don’t have to eat it. I hope he likes it because tossing it, even is this form, is not an option!!


 I had plenty of zucchini leftover . ..enough to make traditional zucchini bread and 12 muffins. This I will eat! It looks delicious!
