Croquettes
We make croquettes to eat on New Year's Eve or Day. They are crunchie deep fried deliciousness best eaten straight from the fryer and dipped in mustard. They are not a health food that's for sure but since they are a once a year treat I think it's okay to indulge.
Since turkey leftovers have never been very successful here, this year I decided to make turkey croquettes. They are not very difficult to make so before the turkey got too old, I got to work. The turkey gets shredded in the food processor. Easy enough. The thick rue is prepared in a large pot- basically butter, flour, spices, milk and chicken broth. Let it cool, add the meat and let it cool.
Then the fun part: roll a spoonful of the mixture into a small croquette shape, dredge it in flour, roll it in egg and then in bread crumbs and repeat! What a messy job! Picture flour all over the counter with splashes eggs and scattered bread crumbs. This is why I only do this once a year!! So thankful for the dishwasher today!

I think I might need to made one more batch since my son thinks he needs to learn how to make them so he can carry on the tradition. We shall see!!
