Mom's soup pot!

Every Saturday someone would be assigned to use this old-fashioned meat grinder to make soup. Onions, carrots, celery, parsley and the like were put through this grinder for the Sunday soup. 

Rather a tedious chore especially because it often slipped off the counter ...who knows why.
Today I was reminded of this as I made refrigerator soup!
Last weekend we had a houseful of people to feed as we celebrated. The food and the fellowship were outstanding! Leftovers were inevitable!  I do hate throwing away fresh produce!
So I made soup! I chopped onions, celery, mushrooms, parsley, red and yellow peppers, a lonely sweet potato and threw it all in a pan to cook down some.  I added an open container of broth and added a large can of diced tomatoes. I added a bit of this and a bit of that from the spice cabinet.  After letting that cook I added a handful of alphabet noodles, a couple of chopped leftover brats (from the freezer) let it simmer a bit more.  Finally, I added a bunch of fresh spinach.
It turned out pretty good! 
Mom's NEVER had tomatoes but it still reminded me of those big pots of soup from childhood. 
Arie is on his second bowl and declared that it was very good!
